200g boneless Chicken, diced
1 Egg Yolk 25g Corn Flour 1 Cup Chicken stock (Chicken Stock Recipe) 50g Tomato Ketchup 10ml Lime Cordial 10ml Vinegar 20g Tomatoes, diced 20g Carrots, diced 20g cucumber, diced 20g Pineapple slices, diced Sugar to taste Salt top taste Oil to Fry |
Mix together salt, sugar, egg yolk,and cornflour and marinate chicken pieces in it for 20 minutes.
Now heat oil in pan and deep fry marinated chicken pieces. Set aside. Heat chicken stock in a wok, add tomato ketchup, lime cordial, vinegar, pinch of salt and sugar, bring it to a boil, remove the scum and add the fried chicken pieces, tomatoes, carrots, cucumber and pineapple. Toss well and serve hot. |
